Jalapeno Cheddar Biscuits

How did you guys fare in the blizzard? My roommate and I journeyed to the florist to buy roses and hydrangeas to freshen up our apartment, which looks so desolate during the winter months. Then, we baked these heavenly jalapeno cheddar biscuits and gobbled them down while working from home. I adapted a very simple recipe from Cooking for Keeps and the results were too good to be true.

Ingredients:

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons butter, shredded or cut into small cubes
  • 1 cup half and half, plus more for brushing
  • 1 ½ cups shredded jalapeno cheddar cheese

Directions:

  1. Preheat oven to 425 degrees.
  2. Whisk flour, baking power and salt together. Mix in 1 cup cheese until combined. Quickly mix in butter.
  3. Pour in milk and mix just until combine.
  4. Dump mixture out onto a lightly floured board. Knead once or twice until the dough comes together.
  5. Using hands, quickly press dough into a rectangle, ½ inch thick.
  6. Make biscuits, pressing down and then pressing up quickly. I used a regular drinking glass for this.
  7. Use scraps to make more biscuits until none is left.
  8. Line on a baking sheet lined with a silt pad.
  9. Brush milk on top of biscuits and then sprinkle evenly with remaining cheese.
  10. Bake until golden brown and cooked through, about 15-18 minutes.

Tis the Season for Fudge

What is it about the dreadful winter cold and the festive holiday lights everywhere that makes you want to devour pounds and pounds of fudge? I made two different kinds last week and wanted to share the recipes for them.

First is a nutella fudge, which is perfectly rich and creamy.

Second is a white chocolate peppermint fudge. Just a warning though: this had a texture that was more like chocolate bark than fudge, but still delicious nonetheless.

My First Adult Thanksgiving

On Monday, I started to feel really disappointed that I would be missing my family’s Thanksgiving dinner for the first time ever. My heart ached as I thought about missing out on seeing my nephew, who seems to be getting bigger with every passing minute, and all the wonderful food my brother-in-law spends all day cooking.

Fortunately, my boyfriend’s brother wanted to host Thanksgiving at his Tribeca apartment, where I was able to cook an amazing feast while surrounded by beautiful friends. We ate our weight in roast turkey, which we catered from Kitchenette (along with gravy, cranberry sauce, and 2 pies), plus:

All of which I made by myself (pat on the back for me, thank you).

Thanksgiving Edition: Turkey, 3 Ways

T-minus ONE day until Thanksgiving! I decided to end our special recipe series with three showstopping turkey recipes. I know a lot of people don’t actually like turkey. I, for one, drool over stuffing and yams and pie, but turkey? Turkey is just that side dish I use to drown the all-too satisfying gravy and cranberry sauce in. While turkey has kind of gotten to be a tradition for the sake of tradition, these three recipes might just change our minds.

Thanksgiving Edition: Sweet Potatoes, 3 Ways

Yesterday I was told “You’re in charge of food for Thanksgiving.” Me? The gal who’s spent her entire life solely responsible for one dish (stuffing) during this holiday?

“It’s for 9 people,” my boyfriend continued. What does 9 people even mean though? How much food are you supposed to prepare when it’s 9 people? I can’t even properly portion out food for myself let alone NINE people.

Nevertheless, I accepted the challenge and began scouring the internet for recipes. I filtered out anything that wasn’t rated above 4 stars by at least a few dozen people. My end results: 2 stuffing dishes, 1 classic green bean casserole, 1 brussel sprouts w/ hot pancetta recipe, and the smashed potatoes casserole I posted last week.

But when it comes to the sweet potato dish, I’m still immensely torn between sweet or savory, light or buttery, classic or modern. Here are three recipes I’m still deciding between. They all look so delicious so please don’t be surprised if all three end up on my dinner table next Thursday.

Thanksgiving Edition: Stuffing, 3 Ways

Thanksgivings with my family involve one brother-in-law magically taking care of the turkey, the green bean casserole, the mashed potatoes, the sweet potato fries (it’s a our little tradition :), the dinner rolls, the homemade gravy, and TWO different kinds of from-scratch pies.

But the stuffing? Leave the stuffing to me. Because there is no true love like the one between me and stuffing. Starve me for a week and I could possibly eat an entire dish of stuffing by myself. So in continuance with our Thanksgiving series, I present to all you lovely readers three mouthwatering stuffing recipes.
